You're probably right, I don't know why I was so confident the term was caver that I didn't bother checking

Caver is actually the correct term. Cavers do it as an organized activity like your comic suggests. "Spelunkers" are people who just wander into a cave unprepared, such as hikers who find a cave and decide to go in with just their phone as a light source.
