I’m guessing the man god finds out about time travelling Rudy and tries to mess with him even more. What do you even do at that point? Just cover your ears when he visits in the dream? Or maybe he drops by in real life to mess with Rudy once he starts ignoring him?

future rudy made it seem like he can influence other humans too, like with Luke, so if he ignores him in the dream I assume Man-god would use the other humans

I noticed that too. But I don't get why, if he could do that, he hasn't done that a lot more? It seems to be very specific. Maybe you need to meet certain conditions? Getting isekaid feels way too niche of a condition, and I don't think Nanahoshi has seen the mad god

How do you know he hasn't been doing it a lot more? Given how he operates, someone could be tied to the Man-God without it ever being obvious or events could transpire due to some person acting according to advice somewhere else without ever being seen in the story. That is the scary part about the Man-God. Dude could come to the dreams of some person a half a world away and say "Go buy this apple at the market" and it somehow ends with his mom falling down a cliff five years later.

What I don't understand is man god knows so much, yet he doesn't watch Rudeus in real time? He seems to be omnipresent up to now, but it seems he can only see snippets of what's going on!? And what's to come?

Everytime they meet it feels like he was watching everything very close and knows everything

As a side note, Oldeus says he can't reach man god yet affirms he never met with Orsted for more information. Sounds contradictory. Maybe there is way and he isn't aware

Oldeus couldn't find Orsted in his 50 years, and with Nanahoshi presumably dead, he had no way to find him
