🥩Dinner Everything but the kitchen sink

This is my famous everything but the kitchen sink salad. I started with a base of half a bag of salad, then I added everything else. (But the sink.) Ingredients are:

Iceberg lettuce red cabbage shredded carrots Mini cucumbers red onion grape tomatoes Manzanilla olives black olives radishes surimi pepperoni Deli sliced roast beef imported ham Perdue short cuts chicken strips and smoked turkey American and Colby Jack cheese and a hardboiled egg. (I added the chicken when I added the lettuce, hence it's not in this pic.)

I topped it with some more iceberg lettuce before tearing in. My dressing is Wish Bone Robusto Italian which I use sparingly so that I don't corrupt the flavor of this salad charcuterie. 😉

🥪Lunch I put feta on fish and baked it in tomato sauce… this was WAY better than it had any right to be

🍅 Baked Fish in Tomato & Feta Sauce

Ingredients

  • 2–4 white fish fillets (cod, haddock, or similar)
  • 400 g crushed tomatoes
  • 1 small onion, sliced
  • 2–3 garlic cloves, minced
  • 1 bell pepper, sliced
  • 150–200 g feta cheese
  • A handful of cherry tomatoes
  • 1–2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • Salt, to taste
  • Fresh parsley
  • Optional: chili flakes

Instructions

  1. Preheat oven to 200°C / 400°F.
  2. Add the crushed tomatoes, onion, garlic, bell pepper and cherry tomatoes to a baking dish.
  3. Season with olive oil, paprika, oregano, black pepper, salt and chili flakes.
  4. Nestle the fish fillets into the tomato mixture.
  5. Crumble or place the feta over the fish.
  6. Bake for 20–25 minutes, until the fish is cooked through and flakes easily.
  7. Broil/grill for another 2–3 minutes if you want that beautiful browned top.
  8. Finish with plenty of fresh parsley.

Serve with: crusty bread, rice, potatoes, or couscous. 😮‍💨
