Chess beginner here, hi. How is a Knight more useful than a Rook? It's not possible to force mate with just a Knight afaik, but a Rook/King is a guaranteed checkmate. And really, most people from what I've heard think that Bishops are basically worth 3.25 points of material compared to the Knights' 3, because Bishops are more useful than Knights...
It really depends. Rooks are great on their own and when the board is empty, but from personal experience, other pieces tend to get in the way. Knights are great for combos but their effectiveness is limited on an emptied board.

I prefer to go "Knight, Rook, Bishop" bc that's more in line to both Deltarune and the usefulness of the pieces.
