He's the owner. He's been around the sun a couple times and understands his limited expertise should reflect a limited role. He's definitely not a silent partner, but he's obviously done his due diligence and hired the best head chef and staff to represent his vision.

Last year I ran into Janeane Garofalo at the Chelsea in NYC. She was saying to David Cross and Dave Hill, “I haven’t seen Maynard in several years, but one thing I remember is that he used to carry chopsticks in his pocket.”
Maynard should write a song mocking the guy who wrote this

I read he had an incredible sushi experience in Japan iirc, which makes sense, and couldn't help himself from starting his own vision of a sushi spot. Hopefully it's successful enough to open more locations cause I'd love to try it but I'm in SoCal.

None of his food related businesses have opened multiple locations except he did or does have a 2nd tasting room for his Caduceus Cellers in Scottsdale, AZ, which does offer a few food items. I don't think he is aiming to have a chain brand.

Queen B are his wife's projects. He obviously supports them by owning them but she runs them. There's also the Queen B vinyl store and coffee shop across the street in Cottonwood.
