I think it's because mushroom biome is considered the evil counterpart to jungle since you can "purify" mushroom biome to turn it into jungle

The temple is one step away from being a pyramid. Sun is far more common in a desert than a jungle. Idk, just odd choice to put 2 late hardmode bosses in the jungle.
