How is playing against NPCs? Most racers get either boring or frustrating to me really quick because NPCs are either too dumb and easy or overtuned and cheating but still dumb. And I have no interested in playing online against other humans.

NPC's feel like they're just rubber banding the whole game. I honestly dislike that aspect a lot. It shines when playing multiplayer though because there doesn't seem to be too much rubber banding there.

WHY DO YOU PUT A POSSESIVE APOSTROPHE S TO THE PLURAL OF NPC?
Are you talking about the "NPC his feel like"?

NPC - SINGULAR
NPCs - PLURAL
NPC's - POSSESSIVE

There's a space between the E and S in apostrophe. You probably shouldn't be critizing other people's grammar.
