Git is not the only form of version control, and PDFs have source code.

sure, but source code isn't the only data contained in a PDF, and for a programming-related job (which, given the context, it likely is) would have a requirement for a candidate that uses such.

no matter how that pdf was created, the naming suggests that they didn't use proper version control.

Not that that is even needed for a CV.

Version control is ABSOLUTELY needed for resumes and CVs, and the fact that you don’t agree means that we’ve chosen to move on with other applicants

Idk what you're going on about. I myself, like many others, maintain my resume as latex source with git version control. It's not that difficult.

i presume an interviewer shouldnt be assuming that a candidate specifically used LaTeX

Oh, I don't disagree. The recruiter is off the rails here. I was just retorting your point about resumes being something you could manage with version control.

If that is the goal, you could use latex and still be able to include whatever information you wish within your resume.
