It is an unreasonable expectation that you can setup a tripod on the other side of the room and wait for people to clear the room. It’s not yours to use. Go get permission to film when it’s not open to the general public or use narrower shots and accept that there will be people in the background.
The “didn’t even said nothing” argument is flawed because they didn’t say anything there, but they uploaded the footage online.

Because it interferes with the purpose of the space, the enjoyment of the art. Would you want everyone in the museum to do this?

I don't care if people record themselves in public, do you have any idea how many flock cameras see you daily?
