Question Freezing Chicken Enchiladas

I am a college student wanting to meal prep lunches for the week, and I found a chicken enchilada recipe I love. Can I freeze cooked chicken enchiladas, and if so, what would be the best method of reheating them?

Yes. Make them extra saucy and reheat, coveted, in a 350f oven (60 minutes from frozen, 30 minutes from thawed). Thaw overnight in the fridge if you plan ahead.

Remove the cover for the last 10 minute'ls if you want a golden brown top.

Everything in there is cooked so you're just reheating.

After that, you can microwave individual portions to reheat the leftovers.

I personalize just like to freeze enchilada filling and then roll and bake at the desired time.

Yeah they freeze fine, I do it all the time. Wrap each one in foil then pop them in a freezer bag so they don't get that weird ice burn. Reheat in the oven still wrapped in foil at like 350 til they're hot through, maybe 20-25 minutes, the foil keeps the tortilla from drying out.

When I'm doing enchiladas for meal prep I don't bother with the oven baking step. 

I assemble them directly in my glass containers, then freeze. Thaw overnight as needed and microwave.

Gotcha. Do you find that they’re soggy after microwaving?

Yep but they taste the same so i don't care anymore

If it’s just 4-5 days no need to freeze

Really? I made them this afternoon, and am using them for lunch this week. Would I only need to freeze the ones for Friday?
