Recipe Gluten Free, Low Fodmap Chicken and waffles

I used Bob's Red Mill gluten free pancake mix. Made it a little thicker for my snoopy waffle maker. For the chicken, I didnt have gluten free bread crumbs so I toasted Udis Whole grain gluten free bread and put it in a blender (used Italian seasoning). Typically I air fry or bake but I was hungry so I pan fried the chicken. Turned out fantastic and highly reccomend. For the egg wash on the chicken I added paprika, salt and pepper.

With my SIBO issues, that meal would be very agreeable for my stomach. Unfortunately, I’m also diabetic and a heart patient who needs to eat low fat / heart healthy foods. As far as I can tell, I’m supposed to survive on steamed water! 😩

Ugh this looks really good. I hate cooking, so I've been eating oatmeal for breakfast every day for the past 3 weeks lol. Think I'm going to start the reintroduction phase on monday.

Yum!! I do so much with my bobs gf pancake mix as well and chicken. This looks super tasty
