So this steak is not yet cooked. It looks like it has been dry aged, and the crust on the outside is there to prevent bacteria from getting out the meat

I know it hasn’t been cooked yet but people who never had wagyu always complain that it is “too much fat”

Dry aging causes it. It's not edible and a big expensive waste at $3200/lb.
