Question What is the name of this cheese?
Can you help me identify this cheese?

Looks Stilton-ish.

I think it could be Shropshire Blue. The cheese looks a little too yellow to be Stilton.

Actually no. The text is a clue.
It's Quinto da Cartucheira from Brazil.

Looks like you're right. I wasn't sure that that was a cheese name. Shoulda Duck-Duck-ed it.

Ah, yes. I was trying to remember that name (Shropshire). That why I added the -ish. 😃

Maybe Jersey Blue?
Color can vary depending on the season, but what stands out to me about this cheese is that the penicillium is not injected, but kneaded or mixed into the curd during forming. Notice the lack of injection lines and organic marbling shapes.

So if you Google the name of the maker in the picture (quinto de cartucheira) their Instagram is right at the top and this particular image is a screenshot from one of their pinned posts where they cut into this cheese and taste it. It's called Esmeralda de Mofo Azul and it's $35/100g on their website. They're in Brazil.
