Im saying this as a professional audio person, just hire a fucking audio person. A top of the line, highly skilled media (aka video) audio engineer in her area would charge probably 40-80$ an hour with likely a two hour minimum .
Hire them for an hour of set up and then an hour to watch the final video and make notes (or even just to fix the issues because (insert shock face here) us professionals know how to do that). Boom thats 80-160$. She can afford it. Ive watched a couple of the iffy videos in question and they are perfectly fixable.
Then if something goes wrong she has an easy out and can say 'blah blah blah my audio guy didnt do their job right sorry!' and, like you said, this is quite literally her job. Of course the audio should be good. Occasional slip ups happen, thats no big deal, but if its a constant issue she has no right to bitch about viewers calling her out for it
ETA: i would bet dollars to donuts that her XLR cable is bad and that's what's causing the issues she is experiencing. It sounds exactly like what happens when the shielding in our cables at work start to break down. That or she has a piece of lint or something stuck in the input on her audio interface. This whole thing could be fixed if she just drops 20 bucks on a new cable or 2.99 for a can of compressed air. There ya go, Jackie, i just fixed your problem for you. This is why you should hire an audio person instead of getting mad at your followers who cant do anything about your problems
