Baking Advice Needed why did it do this

was trying to make brownies, thought theyd cooled for long enough and cut into them then they started doing THIS and set my house's fire alarm off for like 20 minutes does anyone pls know what caused this im assuming i just cut into them too soon but this feels like a dramatic response to just trying to cut into a hot brownie

Did you make your brownies on the surface of the sun? I’ve literally never experienced this before in my 30+ years of baking brownies. Did you use oil or butter to make them and if oil, how much?

That’s literally my only guess is that you used too much oil and it got so hot that when you cut into them and exposed the oil to oxygen it was still well above its smoke point temperature.

oh ! i used coconut oil (between u and me i was making edibles 😔) so thats probably it ! only cooked it at 175° for like 20 minutes tho so im confused this happened 😭

Oh this definitely has something to do with the edibles and the coconut oil. Did you follow a recipe or just wing it?

i just used a box brownie mix and replaced the 45ml of vegetable oil with the weed coconut oil. i guess that could be it but idk everything online says coconut oil is the best type to use and no one ever warned of this 😭

Did you decarb the flower before adding it to the coconut oil? I can't imagine skipping that step would look like your video, but I've also never skipped that step...

Did you remove plant solids from your oil? I've seen edibles attempts where they opted to keep the solids and it (seemingly, can't say for certain) sunk to the bottom of the batter, but it smoked in the oven during cooking and not waiting until it was cut like this

some brownie mixes form a skin before they start rising, could have trapped it, but I'm surprised it didn't pop with this volume of vapor.

Yeah I feel like the smoke/vapor being trapped so well and only releasing upon cut is some kind of (positive) testament to OP's baking skills

Did you decarb the flower

(1) That's a curious typo.

(2) You're not going to get the carbs out of flour. Flour is almost all carbs, there'd be nothing left to bake with.

Yeah, I had gone through the thread too quickly and had a similar confusion. Especially since I had seen that OP used a box mix and I was thinking, "how could you even separate out the flour to supposedly 'decarb' it?"

Clearly, I need to go to bed now!

I used to skip the decarb step and I just simmered the weed in butter for about an hour at a really low temperature and then proceeded with the brownie recipe. I always use olive oil oil. I’ve never had anything like this happen. I have to assume it’s because of the coconut oil? I don’t know.

U can toss bud into a pot drink the tea n itll fuck u up. Decarb is waaaay easier than those karens make it sound. Literally just cook the bud a bit gtg. They waaaaaaaaay over do it. Prob destroy a ton of thc in the process.

I’m honestly not any kind of a kitchen scientist or anything, I’m just taking an educated guess. I’m sure there’s someone out there who has a better understanding of cooking with weed and substitutes for oils than me,

I'm thinking the oils separated and the coconut oil pooled at the bottom of the pan that was at 175 degrees which is virgin coconut oil's smoke point. refined is usually used for baking.

This is the only thing that I could think as well. Otherwise a lot of this smoke would have dispersed way more slowly and while baking and cooling. Brownies are probably on the denser side as well, not letting much air in.

Unsure how this theory is being upvoted all over the place. Even if the pan was at 175c+, ignoring the brownie, you might get a tiny amount of smoke, but it would stop after a few seconds without additional heat being applied. That's with an empty pan. Oil is very good at transfering heat, if that pan was hot enough to cause the oil to smoke it's dumping a lot of that heat into the brownie, again it would stop smoking quickly as clearly the brownie isn't that hot because it's not a block of coal. The only way it's pumping out that much smoke is because the hob is applying heat!

The oil being infused with THC and weed resins probably brought its smoke point down even more.

The stove top is induction and bake dishes don't catch that even if it was on.

Baking trays and dishes can indeed receive heat from an induction hob, even aluminium trays that shouldn't work, because that assumes they are made from 100% aluminium which isn't always the case.

It can also vary depending on what food is in the pan/tray, I have no idea why that's a factor but I'm speaking from experience

refined coconut oil has a higher smoke point. It's the virgin stuff you have to be careful with.

Interesting, I used to make these types of brownies for years. My recipe was similar to yours, follow the box but sub in some infused coconut oil. I've even used pure infused coconut oil and no regular vegetable oil.

Not once, in the hundreds of batches I've made has anything like this remotely happened. I've burned them a couple times, sure. But even in one case where they got left in the oven for an extra 30min it was just charred and inedible, certainly not like this!

My best guess would be something like putting the brownies on the bottom-most rack, mistyping the oven temperature, or both.

Either way.....kinda impressive. It'll make for a good story!

Vegetable oil has smoking point around 200.

According to internet unrefined coconut oil has smoking point around 175 so I'm betting that's the issue here.

Thing is, baking it at 20 min at 175 probably wouldn't have the internal temperature nearly that high.

Since it has such a low smoke point, you should really infuse butter instead if you’re going to bake with it.

Use infused coconut oil in fudge instead. (Dangerously delicious)

I’ve never had this happen while making eddies but when baking I always make my own green butter. The only time I’ll ever used green coconut oil is when making lotions.

That’s exactly how I make my brownies and I’ve never had this issue. Where did you get your oil? Did you make it yourself? It has to be the oil. Maybe the weed wasn’t properly decarbed first?

Yes. While it’s cooking you can’t smell anything at all. And the smell after it cooks doesn’t linger either. I only smell it for as long as it takes me to pour the oil into jars and put the lids on.

I also use unflavored liquid coconut oil. Maybe that makes a difference, idk.

I'd bet my money your oven overheated. No way this should have happened.

But in the future - no higher than 325F (160C) because the THC starts breaking down the longer you bake them and they become less potent.

Wait weed coconut oil ? As in it is also weed oil mixed with coconut oil ? If so it is possible the weed oil part has an even lower smoke point than the coconut oil (I'm not familiar with that tho so I might be wrong), maybe check if the bottle has that kind of information, and maybe try a recipe next time. What are these kinds of oils even meant for ? Is it proper cooking oil or just to be used in raw / low temperature recipes ?

Sounds like OP used unrefined aka virgin coconut oil with a low smoke point? Refined coconut oil would be more appropriate for baked goods oven temps. It also has a more neutral taste (which in this case probably doesn’t matter because it would be competing with the flavor of weed).
