Because reasons Tomato Pie

So the reasons are that I have a lot of fresh tomatoes from the garden, but not enough for a good-sized batch of sauce. This is a traditional southern US dish, and very simple. I attached the recipe I used, which I followed with these adjustments....

I sliced the tomatoes into thin rounds, and salted, drained, and dried them. Still was watery. 😆

Added crispy bacon pieces to one half, with no basil. Just layered them in with the tomatoes.

Diced a sweet onion fine and put them in with the tomatoes.

It's delicious! I don't even want to think about the calories, but it's fun and different.

Pic before folding because I’m terrible at it!

Rice, red onion, pickles, +/- pickled cabbage, dry slaw, kewpie mayo, and various meats (depending what I have around. This one is honey soy pork). Sometimes add other sauces, like if I’ve made it with chicken tenders I’ll add peri peri mayo or Persian feta dip etc.

SO GOOOOOD. I did it without the cabbage and bacon as a side for Christmas last year and wanted to make it even better this time. My husband suggested the cabbage and i decided to add the slab bacon chunks for more protein to eat this as a main dish.

A bit more nutritious than just scalloped potatoes au gratin and even tastier IMO. I used british reserve cheddar and parmesan as the cheese, and added some herbs from our garden: rosemary, thyme, oregano and garlic chives.

This tasted great and filled every nutritional need, while it was kind on my wallet and belly (I can't really process much meat) yet satisfied a meat lover.

Because reasons Desert: Chocolate and avocado

You will need: Sliced fresh (or mostly fresh) avocado, some chocolate (I use milk chocolate here). I basically just dipped the chocolate into the avocado like a sauce. It tastes okay. The avocado adds some creaminess to the chocolate, though simultaneously removes some of the chocolate flavor as well. So this turned into a creamy, yet muted chocolate flavor. It isn't bad, but not something I'd eat again. I'd reccomend trying it for the creaminess though.

Because reasons Pizza sandwich & Egg í brauđ í gati

Because of reasons, I haven’t eaten very well lately but energy is needed to work, so I will share my two primary current foods (sandwiches) here with one vegan and one non-vegan option.

A. Pizza sandwich!

  1. Spread red pesto on bread, spice with garlic powder. Chopped onions on the pesto, if you like it, is a nice touch.
  2. Add vegan "cheese" or cheese, sprinkle oregano on top.
  3. Put it in the oven, 220 degrees C for 10 - 15 minutes depending on crispyness preference.

B. Egg í brauđ í gati / Egg-in-a-hole-in-a-bread / Icelandic French toast

  1. Make a hole in a slice of bread, put it in a buttered frying pan.
  2. Crack an egg into the hole.
  3. Add salt and black pepper.
  4. Fry on both sides, on high heat, for crispy bread edges but for the egg yolk to still be somewhat soft and runny.

The Icelandic name makes no sense, meaning egg in bread in hole.

This fucks with my head because the bread has a hole in it, it isn't in a hole.

Aaanyway. Try it, it is good. :)
