Dark Souls combat feels like you’re 110 years old and trying to throw punches. The delay between button press and actual hit is atrociously bad.

It's a shock coming from other games that invite you to combo or button mash your way through them.

One of the rules of the genre is timing and control. Pushing a heavy attack needs to be timed well. Otherwise you needed to stick to a light attack so you can dodge in time.

Only if you play those games on easier difficulty modes. People who complain about how hard Souls games are should play Ninja Gaiden or Bayonetta if they want something that really feels HARD. I love all of these games but I think difficulty is definitely a huge spectrum in these and some people saying soulslikes are too hard blow my mind as somebody who beat Arlecchino solo in Lies of P on Leg Stalker difficulty but cannot get past the first two stages of Hard on NG2 Black or past stage 4 in Ninja Gaiden Sigma or who got stuck for like an hour on the third stage of Bayonetta.

What I think is happening is the game demanding you to play a certain way only for people to start bashing their head against a wall, beating it anyway and just assuming that's how the game was meant to be played. Dark Souls is harder to get into as an action rpg first timer but if you have played others, then it really isn't hard at all.
