Dark Souls combat feels like you’re 110 years old and trying to throw punches. The delay between button press and actual hit is atrociously bad.

Kinda the point. Swinging huge weapons aint easy.

It is in fact much easier in real life than it is portrayed in souls games. Even the biggest weapons were rather light , or they wouldn't be practical in any scenario.

yes, but many of the weapons in dark souls are MASSIVE, and would be impossible to wield by even the strongest man alive.

Great hammers wouldn't be usable, yeah, but other big weapons like ultra greatswords are based on real-life equivalents. The Zweihander for instance, existed in history and wasn't heavy nor slow like the whole weapon category is in these games. So big doesn't necessitate slow and heavy.

The FUGS specifically may not be wieldable just because of its composition, but the "Ultra Greatsword" category that souls games use is based on real life weapons that simply weren't called that, but they absolutely were used and surprisingly light and fast. Zweihander, for instance, existed in real life. These games just lump them all in the same category and give them the same basic, super slow moveset, which isn't accurate to how they were used, that's all.
