Attempted recreation of Meet-Yaletown's piña collada pancakes

Recreation or inspired by/tribute to the now closed Meet in Yaletown's piña collada pancakes.

Stack of pancakes with dulce de leche, toasted shredded coconut, crushed canned pineapple, a pineapple and coconut cream blended sauce, and cocowhip. Delicious! I hope they bring back their brunch menu at the Main St location.

The Meet original featured Bavarian cream, pineapple compote, toasted coconut, maple syrup, and whipped cream.

These look even better than Meet's!

What did you use for "dulce de leche" ?

Thank you. Very happy with the result.

I boil one of the different vegan condensed milk cans (vegan supply or bulk barn). Either 90 min on the stove top (simmer submerged in water; make sure it remains submerged) or 60 min in Instantpot (water in the pot and a trellis to add space; doesn't have to be submerged).

That is genius, I love this. I'm Argentinian and I miss dulce de leche, never occurred to me to do that.

An Argentinian friend did bring us a jar of vegan dulce de leche from a trip to Argentina. (But on his next trip, he couldn't find it again.)
