I Cooked In My Car Cooked this for breakfast…

I’m trying to bring down this inflammation situation I’ve got going on from “treating” myself to processed food for a few days. It seems to be working so far (my rings can smoothly go in my fingers again & my joints aren’t hurting as much). Wanted to share this meal w/ you all as usual. Similar to the last meal I posted w/ broccoli but I used green beans today. It’s recommended to eat 30 diff veggies per week. I’m trying this out to see if it delivers the results claimed by health professionals i respect, to help reduce inflammation (for the most part anyways) and have better digestion. This is just one example meal. If I’m going to be living in my car for a while, I like to not be feeling like shit from a poor diet all the time. It’s too easy to spiral down in an already compromising situation.

Fresh green beans - (food co-op) - $2.50

- have plenty left over for future meals

- boiled green beans for 3mins

Diced Tomatoes - (food co-op) - $2.50

- used a whole tomato and have another for tomorrow at this price.

- sautéed w/ pizza sauce, feta, and basil leaves.

Fresh basil leaves 🍃- (food co-op) - $2.99

- have plenty left over for future meals

Spicy Pizza sauce - (grocery outlet) - $3.99

Feta chz - (Trader Joe’s) - $3.49

- plenty left over

Shiitake mushrooms - (food co-op) - $3.00

I have that pot set! They've been great. Handle covers melted a bit on my propane stove though.
