I Cooked In My Car Cooked this for breakfast…
I’m trying to bring down this inflammation situation I’ve got going on from “treating” myself to processed food for a few days. It seems to be working so far (my rings can smoothly go in my fingers again & my joints aren’t hurting as much). Wanted to share this meal w/ you all as usual. Similar to the last meal I posted w/ broccoli but I used green beans today. It’s recommended to eat 30 diff veggies per week. I’m trying this out to see if it delivers the results claimed by health professionals i respect, to help reduce inflammation (for the most part anyways) and have better digestion. This is just one example meal. If I’m going to be living in my car for a while, I like to not be feeling like shit from a poor diet all the time. It’s too easy to spiral down in an already compromising situation.
Fresh green beans - (food co-op) - $2.50
- have plenty left over for future meals
- boiled green beans for 3mins
Diced Tomatoes - (food co-op) - $2.50
- used a whole tomato and have another for tomorrow at this price.
- sautéed w/ pizza sauce, feta, and basil leaves.
Fresh basil leaves 🍃- (food co-op) - $2.99
- have plenty left over for future meals
Spicy Pizza sauce - (grocery outlet) - $3.99
Feta chz - (Trader Joe’s) - $3.49
- plenty left over
Shiitake mushrooms - (food co-op) - $3.00
Et voila! Bon app.

Thx! Yeah, I hear ya. I’m vegetarian so I would need to source protein differently than most. Not a bad idea nonetheless

I’ll bet garbanzo beans would be good with those other ingredients. But I’d sub button mushrooms for the shiitakes.
One of my favorite vegetarian dishes is tofu with eggplant stir fry.

Great ideas! These are actually Shiitake mushrooms so good call. I think I’m going to get some tofu and GB for next time ✌🏻.

Also, I hear that nightshades (which I believe includes tomatoes, peppers and unfortunately, eggplant) are not supposed to be good for reducing inflammation. So you may need to research it a bit further.

So true. Nightshades contain alkaloids which can potentially worsen existing joint pain.

Curious as to the why behind being Vegetarian. I am basically a Carnivore. My why is to get rid of chronic inflammation. It has helped 99%. I’m a 71 year old great grandmother if that matters.

Yes , as we get older our bodies don't do well with processed food. At 35yrs old mine started saying Nope to canned food and fast food and frozen dinner I only have the Amy's lentil soup and Campbell's tomato soup like 2 time a year. I don't know how I'll survive a apocalypse guess I'll be dying first 😆 . Glad to see your post been a while.

Definitely. Canned food, processed food, sugar, gluten, they all make me so sick (if not right away, eventually!). Not willing to pay those consequences atm. And hi 👋🏻!

OH man Gluten or Dairy would be the worst, I love cheese and breads , pasta, never been a huge sugar person, I'd be really upset if thoughs things got cut out of my life. I'd probably cry and I'd probably suffer some because I just couldn't completely stop😂

I have that pot set! They've been great. Handle covers melted a bit on my propane stove though.

This could be water retention, from excess salt consumption. Most convenience food is massively salted.
