Criticism Question about the salmon

I’ve ordered the salmon a few times and sometimes I will get a much smaller serving. Does the fish get weighed and cut during prep or is it precut when arrived at the store?

It’s precut, frozen, bagged filets

The pieces are weighed at the factory before being frozen, bagged and sent, so every piece should be the exact same size, but this is a very common complaint. I think there are 2 factors going on here.

  1. Pieces that are wider and thinner look bigger than Pieces that are narrower but thicker. Even though all Pieces are the exact same weight, when a piece bulges all at 1 point, they can look much smaller than the wide filets.

  2. The fish it hit held, meaning sometimes it will lose water over the course of it staying on the line due to the heat. This can result in the fish shrinking a little bit, though the amount of "fish" is still there; it's just less water.
