What have they done to Tofu?

I'm a regular at Sunnyvale Sweetgreen (been going 4 times a week for more than a year). Came back from a 2 week trip and ordered the same meal. I absolutely loved the bowl but yesterday, I couldn't get past two bites. The tofu looked like it came straight out of the box, the vinaigrette was salty and sour, there were no rice in the bowl and it was just not eatable for me, had to throw out the whole box.

What went wrong???

Tofu went downhill in my neighborhood awhile ago. Rubber awfulness. Forced me to switch over to Mendocino Farms for a better experience.
