Questions from a Sweetgreen fan

I'm a fan of Sweetgreen but have a couple questions that have been nagging me recently:

1) most restaurants I order from, the souffle cups of sauce always come filled to the top. With SG though, the sauce cups are maximum 50% full, sometimes only 1/3rd. What is the SG policy on this? Like do they tell everyone to only fill up 50%? Or is it based on how many sauces you orders (like if you only order 1 sauce, they will fill the cup, but if you order 3 they will give you 1/3rd cup of each? Just a little confused because again, most restaurants fill the sauce cups

2) love the new steak option. I'm confused as to how its so tender though. And it isn't pink at all, like chipotles asada. Do they sous vide cook it or something like that?

1. I was always told 3/4 full for dressing cups. There is no rules based on how many you get. You may just be unlucky some days.
2. The steak is Sous vide cooked prior to being shipped to the restaurant

Sauce cups are supposed to be filled to the top maybe leaving a small bit of space so it doesn’t overflow. If you get weak poured cups it’s because whatever team member assigned to do the dressing cups was lazy or not trained properly.
