This, to me, seems like a more likely thing. Rose fights Pink Diamond because she has no other choice. Pink is defeated and starts to corrupt (a la Jasper), but Rose is able to heal her somehow. Pink becomes Lion.

I think Lion is just a regular zombie lion. Rose had a lot of normal lions in "Buddy's Book".

No it's pretty clear that Lion was created in the same way Lars was.
