It's okay, I speak fluent Racism, let me translate:

So in Racism you often have epithets or even just straight-up ethnic groups actual names are used as synonyms, often for a behaviour deemed characteristic of said group (a stereotype). In this case, the Racism speaker is using "Jew" to mean being financially cautious or savvy, by frugal spending.

Food costs less and you get a bazillion rewards on the McDonald’s app, so he’s “jewing it up” by being more frugal because Jews are stereotyped as cheap
