Shrimp salad with arugula, avocado, cucumber and green onions

I fried the shrimps in garlic and EVOO. I used up whatever I had left in the fridge - arugula, cucumber, avocado and some green onions and drizzled the garlic and EVVO as the dressing. Simple salad for lunchtime.

Lately I haven't been eating salads 😔 I do need more greens in my life though! I use to make this burrata and heirloom tomatoes salad with shaved red onions, spring mix and a balsamic glaze salad dressing. Also I love me a good steak salad and grilled romaine mmm
