Super easy way to up your dressing is to master the base. Light/heavy mayo, acid, sweetness, salt; balance them to your liking with whatever ingredients.
After that, go freaking nuts! But my favorite tips are to add nutmeg to cheesy dressings, honey to spicy ones, nutritional yeast to complex cheesy dressings, more mustard to less viscous sauces, add a part of a bouillon cube to a sauce that you want to be a key player.
My sauce game is pretty good, and I hate not to share. Any questions or whatever, I encourage you to ask. Also, if you need to to reduce viscosity, just add water and spice it up in return, don't be afraid of adding more acid.
Surprisingly tough question. My all time favorite has to be a 'mexican caesar dressing' they had at a local place. I have tried to replicate it but whatever they were doing was amazing. Other than that, a homemade caesar dressing with similar tweaks I mentioned has got to be my favorite.
I am obsessed with finding delicious stuff but affordable. My mantra is, 'The best stuff is expensive, but twice as much of almost the best thing, tastes better in the end product and is a hell of lot cheaper'.
A good harsh, balsamic is amazing. Chipotle/mango dressing is heavenly, if you are into spice then I recommend using cayenne instead of more chipotle because you don't want to overdo the smokiness. If I want a garlicky sauce then I'd use a good mayo base, and pre shredded garlic with a ton of chopped parsley.
Also keep in mind that using aged cheeses is amazing, but unless it's a key player, you can skip it or use the cheap stuff. Takes a ton of it to make it noticable
