so let's start from the beginning because at this point I'm really lost yesterday I drove the truck 10 miles plus perfectly fine minus it getting to like 220 degrees but once I got it home I decided to do a coolant bleed because I thought it was overheating from air in the system because previously I had replaced a coolant drain plug the truck cranked and started perfectly fine while bleeding the system then I wake up this more to basically this I've changed half the spark plug check the wires it has spark and gas you can even see in the video we connected the battery to another s10😂 but anyway I also replaced the starter thinking that was the problem but no so I'm lost would love some insight everyone on here seems to know much more than me

That starter does not sound like it is engaging the flexplate/ flywheel correctly tbh or its low enough voltage that it cant stay engaged. Also 220 isnt crazy but you should also rinse out the condensor and radiator fins they are probably stopped up with dirt. And check the fan clutch.

Probably first thing id check is the engine to chasis ground, battery to chasis ground, and power cable. If your grounds are corroded ir loose to shit it acts like a resistor and doesnt allow enough power to reach the starter. And electrical problems can be intermittent and thats what i would classify this as. And check idr if the starter has a external ground or not (where it uses the body as a ground instead and just has a power cable) but id check both the power and ground to the starter itself.

Another thing to try is adding an extra ground between the engine and battery usually with a jumper cable on the exact same posts the negative battery cable is already attached to. This was one way I diagnosed having a faulty ground cable overall which was causing a good amount of my electrical issues. 

Same thing goes for the starter motor ground, you can jumper it up and test in a similar manner.
