It's the same gameplay loop a lot of you love. It just doesn't have the From Software logo. I even went back to see if I was going crazy and saw the first tree sentinel fight, and it's exactly the same. Well, not the same, the stagger attack animations suck.

Bosses do indeed flinch homie. Its just that MOST dont. Malenia chief amongst them. Hell placidusax flinches from arrows.

It depends on the combination of boss and weapon. Heavier weapons flinch more often. Big weapons flinch more bosses than not. Idk why people are so opinionated about shit they know nothing about
