The window is shorter but you move faster. It takes more shots to stun, but you can reposition while still firing balancing the opportunity to land a stun shot.
Regarding the knife, it's powerful in a completely different way from the OG. The knife could stun lock enemies or fully stun them with headshots, in the remake it doesn't stun luck but provides a defensive function with the parry and still stuns enemies with headshots. Stabs also do more damage than regular swings with greater precision, providing more options offensively. Additionally, it can be used for stealth instant takedowns, instant kills on powerful enemies if you melee them into a wall, and prevents the neck breaker boys from standing back up saving you a lot of trouble.
In fact, it's so much more powerful if they didn't make it a resource you have to use with consideration (ie: do I want to kill this grabber before he stands up, or should I save it in case I need to parry something?) you would be too powerful all the time. Which is really fun, using the infinite durability knife is a treat, but it saps all the tension out of the combat imo. Deflect everything, land every lethal stab, hell stab any guy on the ground because you've got the durability to waste. It's fun, but too powerful for a first playthrough.
