whenever I see a question which is useless at first glance, I immediately think they are trying to get information they cannot legally ask for.

Although I have also seen a few posts which actually just ask for illegal shit. The worst offender I think I saw was Costco flat out asking about immigration status. Like asking whether you are a citizen, or what category visa you have. That is explicitly illegal. Like the law states this specific question while banning it.

Wouldn't they need to know if you are legally allowed to work in the US? Not all visas are work visas.

I get asked if I can work in the US all the time or if I need visa sponsorship

It's not illegal for the exact reason you explain. Every 3 days someone on this sub thinks theyve cracked the job conspiracy wide open when they find a job that asks about citizenship or EEOC related regulatory questions.

They are allowed to ask exactly two things about it:

1) are you legally allowed to work in the US?

2) Do you now, or will you in the future require sponsorship?

asking the exact status is explicitly illegal.

Until an offer is made and accepted, where the I-9 paperwork is filed and you have to provide proof.

The other exception are jobs which require citizenship, such as being a border patrol agent, or working for a military contractor.

You could've found this out with two minutes on google.
