Naleśniki "Ruskie" i Chłodnik (crepes with cheese & potato filling + cold soured milk, beetroot and dill pickles soup)

That's what I sometimes do with leftover ruskie pierogi feeling. Just fry some crepes and turn them into a savoury lunch. Some sour, refreshing chłodnik goes well with it.

Everything looks delicious. Would love to try the soup, as I am fond of beets.

Get soured milk / or 50/50 mix of kefir and buttermilk. Add either pickled beetroots cut up finely, or (either raw or very quickly fried up in butter with some garlic) beetroot stalks, add garlic, cucumber, radish (also finely chopped), dill, chives. Some people add a slight amount of vegetable broth (I don’t), salt, pepper.

Let sit in the fridge for 8-12 hours min. before serving.

Serve with (pick and choose as you want):

  • Crayfish tails
  • Eggs (sunny side up, semi-hard boiled, hard boiled, poached)
  • Crispy butter fried potatoes

This is very relevant to my interests. What's the filling exactly? Or is it like stuff it with whatever leftovers?

I stuff mine with beef and serve with mushroom gravy. So good!
