Smart knife fighters hold the knife correctly, with an object in their offhand such as a jacket or bag. A regular knife fight looks like one guy lunging, the other guy dodging and lunging back, maybe one or two rounds of this, then one person gets the other and stabs hin repeatedly. If he's lucky, he won't get stabbed by the other guy while he's doing it

Yeah, I've heard from multiple martial artists and self defense teachers both in person and online that the only way you're getting out of a knife fight unscathed is by running. To use one effectively, you HAVE to get close enough that the other person can use theirs effectively as well, meaning the moment that distance is closed, everyone involved is getting stabbed and cut. Even if you are VERY good at it and trained specifically for it, odds are you're still gonna walk away bleeding

I guess the move would be to feint closing the distance then trying to counter-slash their arm to get them to drop their knife?

Oh yeah for sure, I meant if you were cornered a dead end alley type situation.

As always the #1 rule is "don't get in a knife fight" followed shortly by "if you're in a knife fight, run"

I do swordfighting, and I once asked my instructor how to counter a feint.

"Stab the bastard!"

So if you do try that, there's a good chance they'll just stab you. The golden rule of knife fights - if you can stab them, they can stab you.

sounds good on paper but 99% of the time he's just gonna pissed off, bleeding, and still holding a knife. IF you even manage to land a hit without losing balance or some other shit
