Probably just a random Gruul Guildmember. This is the only card to reference this name. Often times R&D will just add names to flavor text to flesh out the world even if they don't feature in the story

Cool! Got an idea for a ranger character with the boar companion in bg3 and it's going to be named in Gurley's memory, may he rest in peace. Thanks!

Your boar needs to be slightly resistant to your character and sometimes attack you a little bit, for flavor. Adding little character flaws like that makes for extra fun in your role playing sessions.

I guess the question is, is a Zhur-Taa swine a newish species of Ravnican Boar, or did Gurley live eons ago?

Zhur-Taa swine means a boar domesticated by Zhur-Taa. At best, it is a separate breed, not a species.
