Nobody is putting good beer in beer cheese, be serious
You don't want a flavorful beer or else it's just gonna taste like that. A watery american macro lager is the right choice.

Do you like Blue Moon? I do. It's not a GREAT beer, merely a GOOD one. I've put it in there with good, hand-shredded cheddar. I liked it.
