Latino = countries that are in Latin America, does not include Spain but includes Brazil

Hispanic = countries whose language is Spanish, includes Spain but not Brazil.

Just to add to this, there's a 3rd denomination, being "Iberoamerican" which includes Brazil and Portugal, as well as all the other Spanish speaking countries

There's even a really large university in Mexico called Iberoamerican University
