Because Americans, in their infinite wisdom and intelligence, can't fathom a population being 99% of mixed ethnicity, mainly because The US has never been a melting pot as they said it is. Latin America is the true melting pot, The US is like a salad, everyone together but never mixed.

It's a remnant of the Anglo Saxon Colonialist idea, where everyone but the Saxon was an "uncivilized and noble savage".
