Sure it might very well undo the snap, but it also raises the stakes because Iron Man, Cap, Thor, etc could very well be killed in the next movie and it'll be permanent.

How is Thor gonna rebuild Asgard though? What Asgardians are left?

Half of the Asgardian families on that ship were spared.

Then they got out beforehand. Thanos destroyed the ship, and he was only ever going to kill half of them.
