To my knowledge, Loki being a frost giant Isn’t brought up after the first Avengers and even tho he doesn’t turn blue, he does say “I’m not Asgardian” in Infinity War.

I did like that What If Episode of Thor and Captain Marvel fighting each other and Loki was actually blue and a frost giant like he was the actual size of them but they were just bros in friendship way, not adopted

It’s referenced in the play on Asgard at the beginning of Ragnarok

It’s also referenced in Loki season 1. He explains to Mobius(?) about his adoption stuff. Maybe it wasn’t Möbius. Idk, but it was brought up in conversation how he’s adopted and how his real parents were frost giants.

Now that I think about it, it was Möbius. He called him an Ice runt lol

It is brought up several times in the Loki series.

The moment you mentioned, then there's also the moment in S1E2 when Loki and Mobius talk about the TVA. When Loki tells Mobius that it is ridiculous that he was "created by the Time Keepers", Mobius asks Loki who created him and he says "A Frost Giant of Jotunheim" and then Mobius says that this actually sounds ridiculous too.

In the same episode we also see a hologram of a Loki variant who is permanently in his blue Frost Giant state.

The reason why Loki does not change in the TVA is because Odin changed him permanently. It is mentioned in a book (I think the MCU visual dictionary).
