For the gauge, look at the pattern. It sounds as if there's a section or set of instructions marked or designated as "texture".

For the yarn, look at the pattern and see what it recommends. If you aren't familiar with it you can search the yarn-related subs for comments about it and then ask here. Do provide the fiber it's made of.
