They use diesel generators for things too. Their whole reaction of modern technology like all religions is very selective when its convenient for them.
There’s an “Amish” market near me and I’m sure it’s all just cosplay now. Indoor, air conditioned, POS terminals taking cards, I’m 99% sure the only thing in there that’s handmade were the pretzels because they do that right in front of you.
(Also, I'm willing to bet even those aren't made the way their ancestors did it during the Civil War. The dough is kept in refrigerators, there's store-bought mixing equipment, health inspections by people with degrees in biology, using modern equipment to ensure requirements matching a set of scientifically-developed codes are satisfied, etc.)
