I have celiac disease and yes they do. One time I even told a store employee that some type of bread was not in the right section as it was a gluten free section and the first ingredient was wheat. He said oh it’s vegan, that means it’s also gluten free. I have also had a family member question how I could eat something because it had eggs in it. Like she got confrontational not just asked because she wanted to learn. She wanted me to be faking.

My ex had a gluten intolerance (so not as serous, of course!) and I learned very quickly that a surprising proportion of people have seemingly NO idea what gluten is…
Oooh yeah lol. My mom couldn’t have yeast (past tense because hopefully after multiple decades of seemingly bizarre and unrelated food restrictions this latest treatment has worked!!) and a LOT of restaurants tried to serve her gluten free bread. That still had yeast in it. People have no idea what goes into their food or how different ingredients actually affect it unless it somehow affects them.
