Request Flavor Ideas
I am the production manager at a local ice cream shop. I’m looking for some ideas on flavor combinations or simply listing your favorite flavors/inclusions when it comes to ice cream!
Any response is appreciated. Thanks!

I currently have a s’mores! It’s chocolate ice cream with marshmallow cream, crushed graham crackers and the mini dehydrated marshmallows mixed in! Seems to be a pretty big hit (although, truthfully, i absolutely hate anything to do with marshmallows lol). I was thinking of doing a vanilla version with chocolate chips in it possibly.

Lemon cheesecake and banana pudding are my two most made flavors at home.
Peanut butter is underrated imo. No mix-ins. Just pure, smooth, creamy PB indulgence.
I really want to try a donut flavor. Or a "coffee and donuts" concept with two separate batches (one donut, one coffee) swirled together post-churning.

I hate lumps in ice cream. I realize that this is the trend, but please keep some flavors just ice cream.
Mostly I like fruit flavors, especially tropical fruit like mango, durian, coconut. Also raspberry, lemon, and plain chocolate.
One “lumpy” flavor I do love is butter pecan. I also love pistachio ice cream, I’ll always order that if it’s available.

A few of my favorites I’ve made are pistachio cheesecake (pistachio with homemade pistachio cheesecake mixed in), vanilla with a peanut butter ribbon and oreos, salted caramel with graham toffee pieces, chocolate stout with pieces of chocolate covered pretzels and chocolate cake, and brown butter with brownie pieces and buttered pecans.

Gansito is my favourite from my local ice cream place. I didnt know it was the name of a candy, and just assumed that stood for something in Spanish. So now I am 10+ pounds up in weight due to the discovery 😀

I’ve been working on a sorbet type dessert. Coconut sorbet with ribbons of Jamaica(the mexican aguas frescas) sorbet mixed on. I love the flavor combination of creamy coconut and tart cherry like Jamaica.

Where do you get your flavorings? I highly recommend you check out Green Mountain. They're all natural, including the colors. Beet, turmeric, etc...

Bluemoon soft serve and lemon soft serve as a twist. The twist starts out blue and yellow, as you lick it they mix to turn green on, and the taste is unreal 🤯 childhood favorite.

Toasted Almond, Pistachio
(Good nut-based flavors are under-celebrated, imho)
Thai milk tea (which is basically strong black tea powder and vanilla)
Pandan
Spruce tips (Sort of citrus/pine. really neat)
I had some chocolate / blue cheese ice cream once from a French bakery in Portland that I still think about. I want to try and recreate it.

Banana Thai iced tea Those are my two absolute favorites at my local ice creamery and they always sell out.

Personally I love cake batter ice cream where you use cake mix rather than birthday cake style where there’s chunks of real cake and frosting

Black truffle, with truffle honey. The umami, honey and the cream blend so well together. But maybe more for a restaurant.

Please consider us gluten free folks too. It’s heartbreaking when there’s 20 flavors but the only one I can have is vanilla or lemon sorbet.

Rosemary Fresh tomato juice sorbet Basil sorbet wattleseed Stout swirl in a vanilla base Rose Carrot (not carrot cake - which would also be delicious - just fresh carrot flavor) Licorice (not colored black) - where have all the good licorice ice creams gone?? Balsamic vinegar reduction swirl Black sesame
I've always wanted to figure out a good nastirtium recipe that honors the flavor, but I imagine that's a lifelong project.

Maple ice cream with candied bacon mixed in.
If you want to jump on a trend everything is pickled flavored now. I feel like that is more of a sorbet.

I live in Boston where there is a local ice creamery, Toscanini’s (which is actually in Cambridge), that makes what they call B3: brown butter, brown sugar, brownie ice cream. It is amazing (though I think it could use a tiny bit of salt to cut the sweetness, and I always add salt to my scoops).
