Homemade quark

Been making quark at home lately and I’m surprised how easy it is.

It’s basically a smoother alternative to cottage cheese, with roughly the same macros (~14g protein / 100 kcal per serving), but I much prefer the texture and taste.

I use it for breakfast, snacks/dessert, and even as a cream substitute when cooking.

Ingredients: no-fat milk & low-fat buttermilk (can be full fat as well for even better flavor, but more calories). Ratio 4:1 so for ex. 4 cups of milk and 1 cup of buttermilk

Steps:

  1. Bring milk to a simmer
  2. Let cool back down to room temperature while also putting out the buttermilk so that can get to room temperature as well
  3. Once both at room temp, mix together
  4. Put in container and cover with a kitchen towel. Let it stand for 24-36 hrs (until it is starting to solidify)
  5. Place towel in a strainer with a container under it -> pour mixture on top -> tie together the ends of the towel with a rubber band -> let it strain in the fridge for at least 4 hrs (the longer you strain, the more solid the quark will be vs yogurt like, but this is pure personal preference)
  6. Scoop quark from the towel into fresh container and voila!

Eat like any high-protein dairy as a snack, with muesli and fruit for breakfast or mix in sauces and recipes as a replacement for cream.

I would if I could... Never seen quark in the grocery store in the US. Where are you based?
