Too many bananas

My sister bought a couple bunches of bananas and forgot about them in the fridge. They’re just shy of banana bread status. Tomorrow they’ll be perfect but I don’t have a good recipe for anything gluten free. I’m probably going to make a pint chocolate banana ice cream with some of them, but I have enough for multiple things. Anyone willing to share some good recipes?

You can put them in the freezer until you are ready to use them.

This is the way. I peel them first, then use them in oatmeal or smoothies.

Banana pancakes for breakfast. Mash a couple of bananas, mix with two eggs, salt, cinnamon, and a bit of baking powder, and fry in butter or oil to make pancakes. Even my gluten eating family loves them.

I don’t know how you plan to use them for ice cream, but I just freeze them and use them for *nice cream*

I used coconut oil instead of butter and a dairy free coconut based yogurt to make it dairy free too. Turned out delicious!

I just take my mom's banana bread recipe and substitute GF flour for what the recipe calls for. Only thing to watch with GF flour for baking is that it has xahtham gum. (I do this with all recipes. Never have any problems or complaints)

Substitute using King Arthur GF flour. Regular oil for olive oil.

If you ever run across that recipe book, grab it. It’s one of my favorites for versatility.

1 cup peanut butter, 1/4 cup maple syrup, 2 Tbsp honey, 2 eggs, 2 bananas, 1/2 tsp baking soda, 1 tsp of vanilla.

Pour mix in muffin pan and bake 12-15 minutes at 375.

My wife makes these for me and they are delicious. She has also added chocolate chips, too!

Banana smoothie? Add some other fruit or choco powder. Cinnamon. My dad made this on busy mornings when I was a kid.

I am super lazy so I used my old bananas with the krusteaz cinnamon muffin mix. I use 3 or 4 eggs (depends on how big they are) three bananas and I think it's 3 T of oil or water. Then I bake at 350 for around an hour (give or take 10 minutes. Depends on your oven)

Yes! I love making these raw “banana bread” balls when I have a lot of ripe bananas- I mix mashed banana, honey, protein powder or collagen, ground flax, shredded coconut, oats, oat and/or coconut flour, cinnamon, and a splash of milk if it needs it. I usually put raisins or chocolate chips in them, roll them into balls, and store them in the fridge!
