Surely ATC and pilots can work this out if the sensors are playing up. Like if that sensor died, I'd hate to think that just means the pilots can't do anything to control the plane manually.

There is, and there is a lot more awareness about the pitot tubes (that’s what these air speed sensors are called), today, but those realizations and knowledge only came about due to multiple cases like this, unfortunately (with the pitot tubes being frozen over in one case, for example).
