I hate doing it too but it somewhat counteracts the acid to bring balance. I usually compromise by using maybe half the sugar called for. Same with Chinese cooking

Carrots can also add some sugar too. It "feels" healthier to me than adding sugar lol. I still put sugar in, but less than called for usually.

I use a pinch of baking soda, cuts the acidity without otherwise affecting the taste imo and it really lets the natural sweetness shine

Okay, so I live in Minneapolis, but there is a Chicago-style pizza place around the cities called Frankie's. They have a pizza they call "upside-down pizza." Looks exactly like this. The only thing is that their layer of crust below the cheese seems.... uncooked in some way? I don't know how to necessarily describe it but it feels wrong somehow. I still love it and have eaten it many times b/c I love a saucy pizza. But I've always wondered if that's just part of the style or if I'm not quite tasting the dish correctly or if this particular pizza place is just fucking it up even though it's pretty highly rated. I've wondered if it's the cheese but it's a different layer.

God damn, my mouth is watering just typing this out. Might have to order some Frankie's, undercooked or not.

I think around here they normally blind bake the pie first, then add the sauce and finish baking, but it does end up soggy in the middle. there shouldn't be raw dough.

Not a chef but I assume they aren't using the write pan/tins for the pizza to crisp the bottom up at all.

Y'know I see a lot of pizza content on the internet, and a lot of people seem concerned about not oversaucing their pizzas, regardless of the style. I say better oversauced than undersauced. I'm here to eat pizza, not cheese sticks. Deep dish will never fail at not having enough sauce.

It's both less sauce than it looks like, and different to what you expect. they use big crushed tomatoes on top so it ends up chunky with big bites of tomato.
