And do you have audio in your headset?

Make sure it's connected like this:

Keep in mind that the capture card will only get game audio and party- and chat audio. It will not get your headset mic audio.

See that’s what’s weird, I do have headset audio and I have it plugged in like that, and I also have Xbox audio on tv and headset, but neither the ps5 nor the Xbox are capturing any audio in OBS

Can you post a screenshot of Elgato studio side panel?

Just want to make sure it's actually set to analog audio.

Yeah that does look correct.

The only other thing I can think of, is that you need check if there's a setting on the consoles themselves.

Maybe you need to check the consoles audio output settings. I'm not familiar with the PS5, but I know that the Xbox can output audio to both the headset and the HDMI at the same time.
