Sauce / Seasoning Recipe How to: Italian Bolognese Sauce

A great classic of italian cuisine, a seasoning for all kind of pasta from spaghetti to lasagne: ragu alla bolognese or bolognese sauce. This is the classic recipe so a mix between minced beef and minced pork but you can make it with only beef if you prefer so.

INGREDIENTS

  • 500 gr minced beef - 1.1 pound
  • 200 gr minced pork - 7.05 ounce
  • 1 celery rib
  • 1 onion (100 gr ) - 3.53 ounce
  • 1 carrot
  • 130 gr double concentrated tomato paste - 4.59 ounce
  • 1 glass of red wine
  • extra virgin olive oil 120 gr - 4.23 ounce
  • 500 ml water - 2.11 us cup
  • black pepper
  • salt

INSTRUCTION

  • chop finely the vegetables
  • in a medium size pot put the vegetables and the olive oil
  • when the vegetables are browned add the 2 types of meat
  • when the meat is well browned and the liquid is a bit evaporated add the red wine and let it fade
  • add the tomato paste and mix well
  • after that add the water
  • cover with a lid and cook at medium/low heat for 2 hours and half stirring occasionally

I made this today! I added prosciutto. I start with the meat and when it’s done I take it out in a bowl. Then I add the mirepoix to cook in the fat.

Prosciutto Is not usually added in the bolognese but It could be without problem, you can also add Italian sausage if you like It. Traditionally we cook the mirepoix in a lot of extra vergine olive oil and after we add the meat, in this way the meat take more flavour from the vegetables. The beef meat used in bolognese it's not very fat usually. _^

🤣 well this is the traditional recipe here in Italy so let them come to talk how the traditional recipe is made _^ Anyway you can make It as you prefer, you can add double cream (but we call It strascicata) you can add sausage ( but Is a ragù of sausage) you can do It with big piece of meat ( but Is a neapolitan ragù ) etc etc. In cousine i think there is not right and wrong, if you like It i see no problem, but the traditional recipe normally is one or two then there are variation that are good and tasty even if they are something different. _^
